With all due respect to basic breakfast fare—pancakes, oatmeal, scrambled eggs and bacon—these ubiquitous dishes that dominate diner menus can, after a while, start to feel little, well…basic.

Specializing in farmers market–fresh produce and house-made tortillas and salsas, Verde Cocina (524 NW 14th Ave, 503-894-9321, verdecocinamarket.com) won us over with its chilaquiles, featuring corn tortillas and farm eggs (or scrambled tofu) piled high with greens, grilled veggies, white bean–garbanzo mash, ranchero salsa, and queso fresco.
